The 3BM Kitchen: Caponata Aubergine Stew

We've made it to late June, have passed the longest day of the year and are now on our way to darker mornings and evenings. This year Summer has officially been skipped in the UK, I have barely had a chance to get my wedges, Josa dresses or straw fedora out, but instead spend the majority of my time in skinny jeans and a leather jacket! Believe it or not Autumn ranges are winging their way out onto the high street ready for us to start stocking up all over again! 
 
This calls for one thing only....a perfect transitional summer/autumn recipe of course! After a fantastic weekend being bridesmaid at my best friend's wedding, I was feeling particularly weary, tired and very much in need of a bit of chilling after a ridiculously early Monday back at work. The one thing getting me through the drawn out day, was knocking up a hearty bowl of deliciousness alongside a big glass of red wine! 

I bring to you 3BM's new favourite dish...Caponata Aubergine Stew. I saw this recipe on Emerald Street (Stylist Magazine's trusty website for everything fabulous) and immediately clicked on it -  super easy, bursting full of Mediterranean richness and reasonably healthy! Tick, tick and tick! Another bonus is how versatile this beauty is....keep it simple or add chicken or lamb and serve it up with salad, rice, cous cous or even warm crusty bread...anything goes! The perfect recipe to cook a big portion of and then swap it up throughout the week with different combos for a tasty lunch or dinner in an instant! 

Ingredients - Serves 4
 
2 aubergines (500g), cut into 1cm cubes
2 tsps salt 

2 tbsps olive oil
1 onion, finely chopped
2 celery stalks, finely sliced
1 garlic clove, chopped
6 large ripe tomatoes, chopped
2 tbsps balsamic vinegar
1 tbsp finely grated dark chocolate
50g sultanas 

2 tbsps baby capers
50g stoned green olives, sliced
Mint to garnish

 

1. Put the aubergine cubes in a colander and add the salt. Leave to drain for 30 mins, rinse and pat dry.

 

2. While the aubergine is draining, heat half the olive oil in a saucepan. Add the onion, celery and garlic and fry for 10 minutes. Add tomatoes with their juice and simmer for a further 5 mins.
 

3. Add the balsamic vinegar, a sprinkle of sugar, chocolate, sultanas, capers and olives. Simmer for 5–10 minutes, stirring often. Turn off the heat.
 
 

4. Heat the remaining oil in a frying pan and then fry the aubergine for 5 mins until golden. Add to the tomato sauce. Return to a simmer and cook for 10 mins then remove from heat. Sprinkle with ripped fresh mint - this seriously makes a difference and adds an amazing finish to all the flavours!
 

Now all that's left to do is to ladle into pretty bowls, pour a couple of large glasses of wine and gobble it all up while dreaming that you're somewhere sunsoaked and beautiful in the Medditerranean...

This Week The Mice have Mostly Been...

We have been one mouse down again this week with HK biggy living it up in Burma - apparently there isn't any phone reception so she hasn't been able to tweet photos smoasting about her time away - i'm sure there will be many to come! Hmmmm I am feeling like one hard done mini mouse missing out on all the globe trotting fun, however I can't complain as it has been a pretty exciting week here in London with the Cosmo Blog Awards! OK last mention of that I promise! 

When we haven't been jumping about with glee or trudging through the dark, rainy wintery mornings, the mice have mostly been...

Perving on food porn... I am of course referring to the fabulous Nigella Lawson back with her new series Nigellissima! I watched on Tuesday and immediately remembered why I love her so much - firstly she is curvy and happy and nothing will stop her adding an extra block of butter or jug of cream to her recipes. She also has a knack of somehow making everything sound super sexy and luxurious even words like 'ground almonds' and 'whisk' !!! 

Did you see her Stylist Magazine front cover q while back? Nothing like shifting those frumpy, miserable, sweaty stereotypes of a chef like covering your face is oozing caramel is there?!?!

I sat there transfixed, not on her cooking skills but on what she was going to come out with next! She officially has the best one liners... see our pick of her top quotes below...

Commencing my Christmas Countdown... 79 days until Christmas Day and only 56 days until you have a daily reason to get out of bed (especially during the week!)...to open that little advent calendar door of course! I know it is far too early to be talking Christmas - we are only just into October for heaven's sake ... our cosy mittens and uber long scarfs are still neatly folded however the best pressies are going to sell out fast so start leaving those hints and web pages 'accidently' up on your laptop screen for your boyfriend, husband, mum, dad or very generous sister to see ... I love you lots mice sisters!

We just had to share the best advent calendar EVER! Exclusive to Selfridges you can be the proud owner or the best present giver for a mere £82! This may seem like a lot to a boy but really it isn't. Crowning DFS our sofa saviour... On a very rainy Tuesday night middle mouse made her way to the Tottenham Court Road DFS store where she was introduced to a very snazzy brand new iPad app DFS has launched to make sofa hunting a doddle.

As goldilocks would say, when you move into a new house/flat everyone searches for that dream sofa that's just right! Well that's exactly what this new app can ensure. It gives you a virtual feel for whether a sofa will or not work in your lounge space. Middle mouse met the app creator, Russell Harte and he helped her draw up a 3D plan of our front room to scale adding in every little detail from our wooden flooring, windows and window frames, our TV, coffee table to the exact colour of our walls. They then set to work and got carried away placing sofa after sofa to see which best suited the space. You can also use your iPad camera to instantly place a sofa or photos you have already captured of the space you're trying to fill. These were our tooshie's firm favs...

Going nuts... for the new Mulberry arrivals - every time they release a new range I fall all over again! I always think how are they going to beat this one ... yet they always do! Well I still LOVE my Alexa and Tilly and I definitely don't think they are beaten but they constantly keep up the good work and new creations!! How??? Well this time it's with the addition of a sweet baby turtle lock, amazing croc print and chunky strap! This mind blowing combination goes by the name of Lily! She also comes with a painful hit to the MasterCard at £1,100 - who says you can't buy taste?!

If the cute little turtle doesn't win your heart then Lily comes in other styles and colours. There literally is one to suit everyone! I would be happy with any of them or even better all of them ... cue 'Dear Old Father Christmas....'

Secretly smug... about not forking out for Anna Dello Russo from H&M. I know I blogged raving about the range recently but in my defence it looked hot in pictures and on paper the concept seemed top notch. In real life however NO NO NO NO NO - a load of brash gold old tosh! 

Middle mouse and I popped in after the Cosmo blog awards en route for more champagne and the window display caught our eye, well wouldn't it you...


 But upon entering we were two very disappointed mice! The clutch bags didn't even close, the necklaces were broken and the sunglasses were flimsy. The only nice piece in real life was one middle mouse snapped up earlier online (phew)...

In conclusion, definitely a H&M collaboration to sit out - pricey and cheap. Sorry Anna but the mice are saying NO!
Well that rounds up another exciting and exhausting week and we for one cannot wait for celebratory cocktails and LOTS of sleep! All that is left to say is....

Knockout Gnocchi...

As you have all probably heard a million times, tonight is the night of the Cosmopolitan Blog Awards! Ekkkk very exciting times in London Towers, we can report a night of nail painting, hair washing and outfit sorting took place and all in between making homemade gnocchi - what good little mousewives we are! Anyway we spied a fabulous looking recipe in last weeks Stylist Magazine and just had to make it. Firstly because it looked so tasty and secondly because we couldn't quiet believe just how easy it sounded! Not the ideal dinner the night before pouring ourselves into skin tight dresses but hey, all for the love of the blog! 

We are happy to say our first ever attempt went swimmingly. Pictures as proof below along with the recipe to try it out yourselves. Enjoy!

So lets start with the basics, the ingredients...

For the gnocchi:
  • 2 large floury potatoes (King Edward or Maris Piper are the best)
  • 50g ricotta cheese
  • Sea salt and freshly ground pepper
  • 90g plain flour
  • 1 free-range egg, beaten
  • 1 thyme sprig, leaves only 
For the sauce:
  • Olive oil, for frying
  • Freshly ground black pepper
  • 150g peas, defrosted if frozen
  • Knob of butter
  • 1 thyme sprig, leaves only
  • Zest of 1 lemon
  • Grated parmesan, to serve 

First things first preheat the oven to 220 and bake those tatties in the oven for 1-1 hour 15 mins. We actually microwaved as we were being impatient mice not willing to wait for our grub. We won't mention that out microwave decided to pack up halfway through - typical! Once baked remove the fluffy potato and mash until super smooth. Mix in the ricotta, a pinch of salt, pepper and then the flour. Then make a well in the middle and add the beaten egg as below...


Combine the mixture with floured hands and work in the thyme leaves until the dough is smooth. The next stage is VERY important indeed, pour yourself a greedy glass of wine to keep you company...


Roll your sleeves up and prepare yourself for a sausage session - Nigella eat your heart out! Shape the dough into long cigars, approx. 1.5cm thick...


Use the back of a knife to cut the potato mixture into 2cm gnocchi pieces. Once done, dent each perfectly formed square to make sure the gnocchi will hold sauce once served...


Next add the pieces to a pan of boiling water and simmer for 2 mins until they start to dance and float to the top. Drain and leave the gnocchi to stand for another 2 minutes. Onto the last stage - heat a frying pan with olive oil and add the gnocchi with salt and pepper and saute for 1-2 minutes on both sides until they turn a lovely golden colour... 


Add the peas, butter and thyme leaves and toss together then add the lemon zest and hey presto! All that is left to do now is serve the beautiful little potato bites up with freshly grated parmesan. As Gordon Ramsay would say 'DONE'...

This Week The Mice Have Mostly Been...

Well this week has mostly been all about MINI MOUSE! Incase you missed it she turned the grand old age of 27 on Monday and has managed to stretch out her birthday celebrations for as long as humanly possible. She has been showered with the most gorgeous presents including the scrumptious Tom Ford Neroli Portofino body oil, limited edition Missoni Havaianas and Iosselliani amazing stacking rings to name a few...

She was also lucky enough to receive a pair of the most recent must-have Zara ankle boots embellished with a smattering of rock star gold studs. They were actually featured in this weeks Stylist magazine so no doubt they will sell out quick sharp! Check them out below - lush or what...




So what else have we been up to? This week the Mice have mostly been...


Fully immersed in all things Olympics. What a week for GB - 5 golds, 6 silvers and 4 bronze so far and still a week of competing to go! I have to say I wasn't overly fussed or excited in the run up to the Olympics (bad Brit) and as a result didn't purchase any tickets, a decision I now greatly regret. So now i'm having to live it through my TV and sifting through imagery shared online. Saying that, there has been some seriously fantastic photography showcased online, especially through the Telegraph and Independent, see some of my Olympic favs below...

Stuffing our faces at East London's Brawn restaurant on Columbia Road. A real mish mash of top notch food ... perfectly cooked quails eggs, hand chopped Tuscan beef, and popping purple beetroot with toasted cumin and creme fraiche - superb! My only word of warning is to steer clear of the pig's trotter, it resembled a plate of wobbling animal fat jelly - yuk!

This Week the Mice have mostly been....


It's Friday! Another week of gruelling work and rain done! And Minnie Mouse has a new outlook on life....just accept work will never be done, pack up at a reasonable hour and head for dinner and wine with your favourite people! It might not be a complete coincidence that I've adopted my new positive outlook when my trip to beautiful, sunshiney Portugal is just round the corner but hey ho I am going to try and stick to it even after my tan's faded! 

Mid-year resolutions aside, we've been busy Mice this week, here's a whistle-stop round-up, this week the Mice have mostly been....

Patiently awaiting Stylist Magazine's London Guide Part III....East London! My favourite thing about Wednesday's is not only the fact that it's hump day but also the day that I get a copy of my top weekly reading material, the Stylist Magazine and it's absolutely free! I love flicking to the 'The Style List' giving each box a mental tick or cross, perusing the weekly hotel review (and wishing it was me who had been sent there!) and checking out the sneaky little fashion shoot section to get shopping / outfit building inspiration! Not only that but the magazine's website 'Emerald Street' sends me a daily email with a 'Top 5' theme and a bar recommendation at the bottom. I have a 'Places to Try' folder in my outlook ram packed full of them for future use! 

Anyway, over the last couple of weeks Stylist have out together 'The Londoners' Guide...' and this week East London was up!! I couldn't wait to get my hands on it and find some new little gems to add to my list...if you missed it Emerald Street has a copy on line that you can peruse! Not to be a bragger (I so am !!) but I'd tried and tested the majority of the recommendations however I will be trying Whitecross Street Market, The Spurstowe Arms and definitley Efes Pool Hall...90's R&B and everyone up and dancing - yes please!!!!

Gorging on the amazing food at Spuntino! I've wanted to visit since March 2011 when it first opened its doors to the public, however I've never been lucky enough to score a table! Many a time the girls and I have planned to head down and everytime there has been a huge queue snaking out of the door with waiting time sof about an hour plus... I'm not a massive fan of the annoying trend of no reservation restaurants! I have visited two of it's sister reaturants Polpo and Da Polpo, and never been disappointed - the decor's cosy and rustic, the atmosphere's buzzy and fun and the food is SUPER SCRUM...so Spuntino had big things to live up to!


My uni girls and I scheduled in our monthly meet-up and decided we were going to get a table this time no matter what it took! As luck would have it, this time the influx of diners seemed to have died down a little (it was very much still busy and bustling though, don't get me wrong) and we got a cute table at the back without having to queue - perfect!


The food was divine...my favourites being Truffle Egg Toast and the Aspargus, boiled egg and hazelnut salad...

I really can't fault anything - the staff are amazing, the wine's delish (and reasonably priced) and it has a super chic New York feel to it! Perfect post work venue for wine, cocktails and unusal tapas! The mac and cheese is legendary so I think I'll have to revisit to try it out!!



Packing, Preening....and getting over-the-top holiday excited! It's that time again, I can put away my cross work frown, stop tapping impatiently on my calculator and get the hell out of HERE!! The London Mice are off to Portugal for a week's break in the sun, sipping Pimms and eating as many Gambas Pil Pil as humanly possible!!! On that note I'll leave you (probably with 10 years worth of rain forecasted) in the capable hands of HK Mouse...so long my friends i'll see you next week tanned, relaxed and FAT!!!!
